How To make whole grain cereals
Roasted wheat berries combined with regular wheat berries make a great hot cereal with a lot of flavor and boldness not to speak of its nutritional and overall health values. Wheat berries are fun and easy to work with you can cook them hot or soak them and eat them cool in a salad with some greens walnuts and cranberries.
Wheat helps with cholesterol problems as well as diabetes and it provides many B complex vitamins.
Roasting the Berries:
You can ether bake a thin even layer on a cookie sheet for 10 minutes at 300 degrees or get a dry frying pan really hot and add slowly about a 1/2 cup at a time for a few seconds then once they start snapping cracking and popping take them off the heat and shake the fry pan side to side (as you would do with popcorn) then place back on heat again for a few seconds and repeat the above process until all berries are a dark brown. you make get a few burnt ones but not to worry leave them in . The darker the berries are roasted the more nuttier the flavor it will be.
Cooling the roasted berries:
Place all berries on another cookie sheet to completely cool . Once completely cooled add 2 more parts of unfrosted berries and mix together this will be your grinding mixture.
Grinding the berries:
I currently am using a kitchen aid stand mixer with a grinder attachment these are great because yo can grind from a course feed type grind to a fine flour type grind. after I cooled the berries and added the other 2 parts of non roasted berries i set my grinder on corse and run the berries through slowly. you should get a yield of 1.5 times the amount of berries as a final product.

Making a Farina Grind: I go 6 lines before the coursest setting
Do not worry about getting a fine flour in your ground cereal thats ok it will add as a thickening agent so your cereal is not like a watery soup.
The Mixture:
- 2 cups hard red spring berries “ROASTED”
